Dear Clients:
I’m knee-deep in final-stage development for GroGenie (your future favourite Jag My Chef tool), which means I won’t be able to suggest individual menus for everyone this week. But I’ve got you covered with something even better: nine brand new recipes that have been living rent-free in my mind for a while now. I’ve tested them, perfected them, and I’m finally ready to share them with you.
These are meaningful dishes—each one tells a story, and I can’t wait for you all to try them out.
Vegetarian Options:
1. High Protein Paneer, Walnut and Peas Curry
A tomato-based curry that’s super creamy but made without cream. Instead, blended paneer and walnuts give it that lush richness, and steamed peas add a lovely bite at the end. It’s light, filling, high in protein, and perfect with rotis or rice.
2. Vegetable Naati Palav (Rustic Karnataka-Style Pulao)
A nostalgic dish straight from my Bangalore days. It’s fiery, bold, and full of flavor—just the way it should be. I can’t make this one mild (it just wouldn’t be right), but if you’re craving something bold and unforgettable, this is it.
3. High Protein Paneer Breakfast Rolls
Wake up and grab one of these! Paneer and tofu scramble rolled into tortillas with a swipe of green chutney or ketchup—or both. Microwave or air fry and you’re out the door. Easy, tasty, and perfect for you, your partner, and the kids.
4. Kale & Pear Salad with Fennel, Sunflower Seeds, and Blue Cheese
I’ve been dying to feed you all another kale recipe that actually tastes good. After a sad kale salad at the Amex lounge in Miami last month, I I had to do something about it—and this is it. This salad has massaged kale, sweet pears, crunchy fennel, red onions, sunflower seeds, raisins, currants, and bell peppers. Dressing includes red wine vinegar and blue cheese (my moldy love), or swap in feta if you’re not about that funky life. Crunchy, bright, summery and addictive.

Non-Vegetarian Dishes
5. Afghani Egg Curry
A green, yogurt-based curry made with onions, cashews, nutmeg, and spices. No tomatoes here! It’s rich, comforting, and totally different from your usual egg curry. Requires boiled eggs as prep.
6. Italian Chicken in Sundried Tomato & White Wine Reduction
The kind of dinner that makes you feel like you’re winning at adulting. It’s savory, juicy, and flavorful enough to impress guests—but chill enough for a Tuesday night. Have it with spaghetti or solo.

7. Thai Saucy Salmon Green Curry with Pomegranate & Basil
My current comfort go-to: flaky salmon simmered in Thai green curry, finished with sweet pomegranate pearls and torn basil. Best with jasmine rice, and a deep exhale.
Versatile Dishes (Veg or Non-Veg Options Available)
8. Red Curry Dumpling Soup
Think cozy Thai soup meets midweek practicality. Tom Kha-style broth with bok choy, peppers, onions, and basil—and your choice of chicken, pork, or veg dumplings. Just one bowl in the microwave and you’re good to go. Warm, nourishing, and soul-soothing.
9. Chicken/Paneer/Tofu Pesto Salad Mix
Your new MVP for quick meals. Toss into a panini, roll it into a burrito with Caesar salad mix, or just top with avocado and eat as a salad. It’s basil, pine nuts, protein, and vibes. Inspired by my old PCCC pesto panini obsession—but this version is lighter, cleaner, healthier, and more versatile.
That’s the update from my kitchen to yours. I’ll be back with individual menu planning soon, but for now—explore these, let me know what you love, and keep eating well even on your busiest days.
With love (and moldy cheese),
Chef Jag
